The physics of tossing fried rice
Engineers filmed chefs tossing fried rice in woks to work out the maths of that flick.
Hungtang Ko and David Hu filmed professional chefs tossing fried rice in restaurants and tracked exactly how the wok slid and rocked.
The movement is two motions in rhythm, a push-pull and a see-saw, repeated a few times every second. They hope it could inspire cooking robots and help protect chefs’ shoulders from all that tossing.
Wok hei, now with equations.
