What’s the physics of a perfect boiled egg?

Periodic cooking of eggs

Engineers found a “perfect egg” method: swap the egg between hot and warm water every two minutes.

Egg whites and yolks set at different temperatures, so boiling one evenly is tricky. The team simulated heat flow inside an egg, then tested a method of moving it between boiling water and a lukewarm bath every couple of minutes.

After about half an hour of shuttling, the white was tender and the yolk was creamy, both cooked just right. It takes much longer than a normal boil, but this is engineering, not a weekday breakfast.

the verdict

The egg goes back and forth. The result: perfection.
